Papaya Salsa
From the Kitchen of: Mary Cesar

2 ripe papayas (1 lb. Each)
1 red or green jalapeno pepper
1 large clove garlic, minced
1/2C chopped red onion
1/4C coarsely chopped cilantro
grated zest of 2 limes
1/2C fresh lime juice

Peel and seed papayas.  Cut into ¼ - ½ inch cubes.  Place in a medium sized bowl.  Wearing rubber gloves, carefully seed and chop jalapeno pepper.  Add to papaya along with remaining ingredients.  Toss together gently. 

Good with baked Red Snapper.
